Title: Banana Crumb Cake

3/4cBrown sugar; packed
1 1/4cFlour
1/2tsNutmeg
1/4tsSalt
1/3cMargarine
1/3cNuts; chopped
1/2tsCinnamon
1/4tsBaking powder
1/4tsBaking soda
3/4cBanana; mashed
1/4cOrange juice
1lgEgg

Combine brown sugar, flour, nutmeg and salt in mixing bowl. Mix well. Add margarine. Microwave High, uncovered, fro 20 to 25 seconds or until margarine is softened. Mix with fork until crumbly. Remove 1/3 cup crumbs to smaller bowl. Add nuts and cinnaon; mix well. To remaining mixture, mix in baking powder and baking soda. Add mashed banana, orange juice and egg; mix well until smooth. Pour batter into a microwave safe 9-inch cake pan. Microwave at Medium (50%) uncovered, 6 to 7 minutes or until edges are set, rotating dish once. Then microwave on High 2 1/2 to 3 minutes until center is no longer doughy. Serve warm or cold. 1 bread; 1 fruit; 2 fat and 235 calories, according to the Microwave Times.
